Cider Braised Bangers/Roasted Garlic Mash

I was trying to come up with something witty to say about Bangers and Mash…but who are we kidding…the name itself is a comic masterpiece! I have always been a fan of this dish, but also thought it could be sweetened up a little, enter apple cider. I wasn’t sure, at first, how the cider gravy would go with the roasted garlic mashed potatoes…but don’t worry, it totally works!

And if you are lucky enough to have an apple farm nearby that makes cider, use that!!! EAT LOCAL!

Local Farmers Sausages in braising liquid, awaiting their turn in the oven!


Ingredients:

For the Bangers:

  1. 2 lbs sausage ( I used local ‘Farmers’ sausage)

  2. 1.5 cups apple cider[yumprint-recipe id=’15’]

  3. 14 tsp each of thyme , rosemary

  4. pinch white pepper

  5. pinch salt

  6. 1 small onion, finely chopped

  7. 1 tbsp cornstarch

  8. 2 tbsp water (or cider)

Preheat oven to 250 F

Align sausages in a single layer in a baking dish

Mix together cider, thyme, rosemary, salt, white pepper and our over sausages and sprinkle with onion

Cover and bake for 90 minutes

Remove sausages from oven. Drain braising liquid into a saucepan over medium heat. In a small bowl, mix cornstarch with 2 tbsp cider until smooth. Stir into braising liquid until thick.

Place a sausage on top of a serving of potatoes and cover with the gravy and enjoy!!

Yuuuuuum!!


TIP: If the gravy is not thick enough, make another batch of the cornstarch mixture and add it to the gravy over heat, a little at a time, until its the desired thickness.
