Gingerbread Man Cakes

Don’t let the ‘Gluten Free’ label on this recipe scare you, it’s freakin’ delicious! You don’t have to have celiac disease or be on a gluten-free diet to try alternative flours. wheat flour is usually highly processed, with most of the nutrients bleached out of it. Whereas most alternative flowers are usually organic, or close to it and just milled not highly processed! This is such a fast recipe, you should be able to get it on the plate in about 10 minutes, start to finish!!

I suppose, you can just make traditional round pancakes, if you don’t have a gingerbread man cookie cutter… But if you do have that cookie cutter, you better get it out!

My favorite way to eat these is with dried cranberries, chop nuts, real maple syrup and a dollop of ricotta cheese!

Dry

  1. 3/4 cup cassava flour

  2. 1/4 cup coconut flour

  3. 1/2 tablespoon baking powder

  4. 1/2 teaspoon salt

  5. 1 tablespoon ginger powder

  6. 1 tablespoon cinnamon

  7. 1/2 teaspoon Nutmeg

  8. 1/2 teaspoon allspice or cloves

  9. 1 teaspoon fresh grated ginger optional


Wet

  1. 3/4 cup Milk or milk alternative

  2. 1 large egg

  3. 1 tablespoon butter, melted

  4. 1/2 teaspoon pure vanilla extract optional

  1. 3/4 cup Milk or milk alternative

Instructions



Whisk all dry ingredients into a bowl until well blended. Ad the milk, egg, vanilla, butter and whisk until it is smooth and pourable but not too thin. Depending on your flour, you may need to add a bit more liquid. If so, add about a tablespoon at a time until you get the desired consistency.


Place an oiled frypan, or non-stick pan over medium heat, once it heats up, pour the batter into the desired size of your mancakes and cook for 60 to 90 seconds per side. Makes 8 x 5 inch diameter pancakes.


No idea how many Mancakes that is...I guess it would depend on the size of your cookie cutter 😃
