Kindling

This creation came about after cutting the crusts off of bread for various recipes. I didn’t want to waste them, so I came up with this great snack (or breakfast).  Its called “Kindling” because the bread is sliced into little “twigs and sticks” and charred.

Its like french toast, but way more fun to eat!

Ingredients:

  1. 2 free run eggs

  2. 1/8 cup milk (or almond milk)

  3. 3 tbsp brown sugar

  4. 1/4 tsp pure vanilla extract

  5. pinch salt

  6. 1/4 tsp cinnamon

  7. 2 slices of whole grain bread (or the equivalent in leftover crusts)

  8. 1 tsp butter

  9. 1 tsp melted butter

KooK it:

Slice bread in 1/2 inch thick “sticks” .

In a large bowl beat together eggs, milk, 1 tbsp brown sugar, vanilla, cinnamon and salt.

Soak the bread in the mixture, carefully turning to ensure all pieces are coated.

Melt 1 tsp butter into a non stick frying pan over medium high heat.

Pour bread into pan, making sure its an even single layer and fry until the bottom starts to char and blacken on the edges (about 4-5 minutes, you will have to lift the corner to check)

When its charred to your liking, flip it and continue to cook until browned on the bottom, about 3 minutes.  Using a brush, spread the melted butter on the top then spread the remaining brown sugar evenly across the top. Remove from heat and enjoy!!

Optional: Broil for 2 minutes to caramelize the brown sugar on the top.

Sweet and crispy, great on its own for a snack, or with some ice cream for a dessert!
